Ingredients

  • lb. sweet or hot fresh Italian sausages
  • 1/4 cup olive or salad oil
  • 1 chopped onion
  • 1 minced clove garlic
  • 1 jar stewed tomatoes
  • 1 can(2/3 cup)tomato paste
  • 2 cups water or stock
  • Salt, pepper, 1 bay leaf, sugar, all spice and oregano

Directions

Cut 1 pound mild, fresh Italian sausage* into bite-size chunks. (There's also a hot sausage). Brown slowly in heavy pan. Pour off excess fat. Add 1/4 cup olive or salad oil; saute 1 chopped onion, 1 minced clove garlic. Stir in 1 jar(2 cups)tomatoes, 1 can (2/3 cup)tomato paste, 2 cups water or stock, salt and pepper to taste, 1 bay leaf and dash of sugar, all spice and oregano. Cover and simmer gently 1 to 2 hours. Toss in warm bowl with drained freshly boiled pasta and plenty of good grated cheese.

* If unavailable, use regular pork sausage; add Italian seasonings--garlic, oregano and a few crushed anise or fennel seeds.
