although you wouldnt guess it from the ingredients this tastes just like a normal sweet cake with a really gingery kick - and compared to a normal cake its really healthy!
Ingredients
- 3 really ripe plantain
- 1-2 green chillies
- 1 inch root ginger
- 1 medium onion
- 1/2 cup flour
- 1 tsp baking powder
Directions
finely chop the chillies, ginger and onion (or use processor). mash the plantain with a fork and mix with the aromatics, flour and baking powder. place in a small, oiled cake tin and bake at about 180 degrees centigrade for 30 minutes or until set and golden.
