Old-Fashioned Rice Pudding Recipe

Ingredients:
2 eggs, beaten
1/4 c. sugar
1 tsp. vanilla extract
2 c. cooked rice
1 1/3 c. milk
1 tbsp. butter, softened
1/8 tsp. salt
1 tsp. lemon juice
1/2 tsp. grated lemon rind
1/3 c. raisins

Directions:
Combine eggs, milk, sugar, butter, vanilla & salt, mixing well. Stir in rice, raisins, lemon rind and juice. Spoon into lightly greased 1 quart baking dish. Set in large dish filled 1" up sides of baking dish with hot water.

Bake at 325 for 40-45 min. or till set, stirring once about half-way through.

4 to 6 servings.
