This salad is so good you can eat a whole plate of it by itself, and it was served at two elegant weddings with tons of compliments!
- Head of Broccoli
- 1/2 c toasted Walnuts, chopped
- 1/3 c Raisins
- 1/3 c Mayonaise
- 1/4 c Honey
- 1/4 c Lemon juice
Lightly steam broccoli- still on the crunchy side and still green. Cut into bite size pieces and chill.
Combine dressing ingredients, add to broccoli. (Dressing will thin slightly as it is absorbed, so it is better for it to start out being too thick than too thin- if necessary add more mayo a little at a time) Stir in nuts and raisins.
