Can double and put in a casserole dish.

Ingredients

  • 3 T melted butter
  • 1/4 c parmesean cheese
  • 1 shallot diced
  • 3 T flour
  • 1 c. milk
  • 1 1/3 c gruyere cheese
  • 1/2 tsp salt
  • pepper
  • pinch nutmeg
  • pinch mustard
  • 3 eggs separated
  • 1/4 tsp cream of tartar

Directions

Grease loaf pan

Saute shallot in some butter, add flour until golden, Add milk whisking until thick. Off heat add gruyere and seasonings. Whisk in yolks. Beat whites with cream of tartar to stiff peaks, about two minutes. Stir 1/4 of whites into sauce. Fold in the rest. Sprinkle with parmesean. Bake until center jiggles slightly, 25- 30 minutes at 350. Serve immediately.
