This is an excellent holiday bread. It is a sweet bread and makes an excellent gift. Wrap in pretty celophane paper and tie with a cord or ribbon.
Ingredients
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 cups sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 16 ounce can pumpkin
- 4 eggs
- 2/3 cup water
- 1 cup raisons
- 1 cup chopped walnuts (optional)
- 7 (16 oz. clean empty metal cans) or 4 ( 11.5 oz clean empty metal cans) with the top removed from one side only.
Directions
Pre heat oven to 350 degrees
Grease and flour all cans
In a medium bowl, add the flour, baking soda, salt , cinnamon, nutmeg, allspice, ginger, and cloves. Mix well and Set aside.
In a large bowl, measure and add the sugar, brown sugar, vegetable oil. Mix together. To this mixture add the 4 eggs, 2/3 cup water. Stir together well. Stir in the 16 oz. pumpkin and blend well. Add the dry flour mixture and stir together till smooth. Stir in the raisons and nuts.
Spoon the batter into the 7 prepared cans. Fill almost 2/3 full. Place the cans on a baking sheet and bake for 50 -55 minutes or until a toothpick comes out clean. Cool in the cans for 10 minutes. Remove the bread from cans and then cool completely. Store in airtight container.
