potato candy Recipe

2 lbs. confectioner's sugar
2 tbsp. butter
1 tbsp. vanilla
1/4 tsp. salt
1/3 C. mashed potatoes
l peanut butter

Mix all ingredients together except peanut butter. Roll out on plastic wrap as thick as you would prefer. Spread with peanut butter . Roll the dough as you would for a jelly roll. Slice it in pieces of whatever size you prefer. Dust with a little powdered sugar and refrigerate. It is better the next day after it has time to set.
