Chicken Marengo Recipe

  Spanish Chicken

Ingredients:

  • 2 lbs.Chicken
  • 2 scoops of flour
  • salt
  • pepper
  • 1/4 lb. bacon
  • 1 lg onion
  • 4 cloves garlic
  • 8 oz can tomoto sauce or 1 can chopped tomatoes
  • 1 jalapeno pepper (seeded)
  • 1 box poultry seasoned croutons

Directions:
In a large skillet brown bacon until crisp. Remove from pan to paper towels.
In a large plastic bag add flour, salt, pepper and coat chicken pieces until covered. Remove to pan and brown chicken in bacon drippings. You may need to add small amounts of olive oil to have enough to fry. Remove browned chicken to baking large covered baking dish. It's alright to stack the pieces.
In a food processor chop onion and garlic and pepper until finely chopped. Add this to residue in pan and simmer until cooked through. Add the tomato sauce and heat thoroughly. Just until it simmers.
Pour the sauce over the chicken and place covered in oven at 350 degrees for 35 minutes.
Pour croutons over chicken just before serving.



This is especially good when made ahead of time. I use Kellogs Croutettes when I can find them.
