Ingredients:

1 clove garlic, pressed
1/2 tsp oregano, ground in hand
1/4 tsp salt
1/4 tsp pepper
1 1/2 T lemon juice*
3 T olive oil*

Directions:

In a small bowl, combine all but the olive oil. Whisk in the oil till thickened and use immediately.

*bottled is fine; fresh is better.
*I use COST PLUS /$7.98 or so a bottle. It makes the difference in taste for this dressing.

This dressing is for a Greek salad(tomatoes, feta, jarred roasted red peppers, red onion...) but i've used it on iceberg, even. I like it because i always have the ingredients on hand.
