These cookies are delicious!


  • 1 cup butter or marg.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 2 cups cake flour
  • 1-1/2 tablespoons freshly grated lemon peel
  • Garnish: sliced almonds


Heat oven to 350 degrees
Beat butter and sugar with electric mixer until fluffy. Beat in egg, then vanilla.
Gradually stir in flour until blended. Stir in lemon peel.
Drop by heaping half-teaspoonfuls 2 inches apart onto ungreased baking sheet.
Gently press a few sliced almonds into center of each cookie.
Bake 8-10 minutes until edges are golden brown. Let cool on cookie sheet for 1 to 2 minutes and then transfer to rack to cool completely.

Makes approx. 80 cookies
