Egg Nests Recipe

Ingredients:
1 Large Onion
Olive Oil (1T)
Butter (1T)
2 Eggs
1oz shredded cheese.

Directions:
Heat pan, add oil and butter.
Add thinly sliced onion.
Cook until crispy, crack eggs over onions.
Turn over when able.
Add cheese.
Put a lid on so the cheese will melt.
When melted they are done.
Serve with sliced tomatoes.

Cook on high until onion is cooked, then turn down to medium.

They are fantastic!
