Sugar soothes and spice excites, a contrast the allure of this lightly smoky, slightly sweet roasted turkey breast.
- 1 cup chipotle salsa
- 1/2 cup raspberry vinaigrette
- 2 tablespoons garlic-flavored oil
- 1 boneless turkey breast, about 3 pounds
Mix the chipotle, vinaigrette, and garlic oil in a small bowl. Pour half into a large zipper bag and add the turkey. Seal the bag and massage the marinade into the meat. Refrigerate for 2 to 24 hours. Refrigerate the remaining sauce seperately.
Heat the oven to 425F. Remove the turkey from its marinade. Place skin side up in a baking dish and pour half of the reserved sauce over the top. ORast until an instant-read thermometerinserted into the thickest pasrt of the meat reads 160F, about an hour and 15 minutes. Remove from the oven, pour the remaining sauce over the top, and let rest for 10 minutes. Slice and serve.
