Oatmeal Coconut Cookies Recipe

Ingredients:

2 c. flour
1 tsp. baking powder
1/2 tsp. Salt
1/2 tsp. baking soda
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. oatmeal
1 c. coconut
1 c. nuts (optional)

Directions:

Preheat oven to 350°F. Sift flour, baking powder, salt, and soda and set aside. Cream shortening and sugars. Add eggs and vanilla and mix well. Add sifted dry ingredients and mix well. Add oatmeal and coconut (don't stir too much - mixture should be dry) Add nuts (optional). Drop on greased cookie sheet. Bake for 12 minutes.
