Ingredients

  • 2 cups cooked dices chicken
  • 1/2 lb. thinly sliced mushrooms
  • 1/3 cup chopped onion
  • 1 tablespoon oil or margarine
  • 3 tablespoons flour
  • 1 chicken bouillon cube
  • 1 1/2 teaspoon curry powder
  • 1 cup finely chopped granny smith apple
  • 1/4 cup chopped parsley
  • 3/4 cup milk
  • 1 cup water
  • Cooked rice
  • Optional condiments: cocktail peanuts, raisins, chutney, and bacon bits

Directions

In large skillet, sauté chicken, mushrooms, and onion in oil or until chicken is lightly browned on all sides. Stir in flour, bouillon cube, salt and curry powder. Add apples and parsley, then pour in milk and water. Simmer, stirring constantly, for 3 minutes or until apple pieces are tender-crisp. Serve over rice with peanuts, raisins, chutney, and bacon bits.

Chicken Curry in a Hurry
