BAKED FISH WITH TOMATOES AND ONIONS Recipe

Ingredients:

  • 4 fish fillets, 6 oz. each (halibut, bass, codfish, red snapper).
  • Lemon juice
  • Sea salt
  • Freshly ground black pepper
  • 1/3 c. olive oil
  • 2 c. chopped onions
  • 2 c. tomato sauce
  • 1 t. oregano
  • 1/2 c. finely chopped parsley
  • 1/4 t. cinnamon
  • 1/3 c. port wine
  • 1/3 c. finely grated bread crumbs.

Directions:
Wash the fish slices and rub with lemon. Rub with salt and pepper and let stand 10 minutes.
Rinse again and drain. Preheat oven to 350 ° F.
Sauté onions in oil over medium heat for 5 minutes. Add tomato sauce, parsley, oregano, cinnamon, and wine. Cook covered 10 minutes.
Arrange fish in an oiled 10-inch baking dish.
Pour sauce over fish. Sprinkle surface with bread crumbs and dribble over a little oil. Set on middle rack of oven and bake 30 minutes or until the fish is cooked and a crust has formed over the sauce.
