Directions:
1. Sweat onions in butter 2. Add drained split peas. Cover with water and simmer for 1 1/2 hours 3. Mix in the frozen peas to give color. Add cream. 4. Pour through a very fine strainer, mashing the solid part through. 5. Season soup with chopped sorrel, nutmeg, salt and pepper. 6. Decorate bowls of soup with chopped watercress. Serves 4 to 6
