Recipe says dont bother trying to make them without the bakers ammonia since it is responsible for the crisp texture. Yield 10 dozen
- 1 c butter
- 1 c shortening
- 2 c sugar
- 1 tsp salt
- 1/4-1/2 tsp lime oil -or- 1-2 T lime zest
- 1 tsp bakers ammonia
- 1 T boiling water
- 3 c flour
- 1 c unsweetened coconut
Oven 350, Lightly grease baking sheets
Cream butter shortening. Add sugar salt and lime oil/zest and mix on high speed for 10 minutes. Dont skimp on the mixing time.
Dissolve bakers ammonia in boiling water and beat this into butter mixture. Stir in flour and coconut, mixing well. Drop cookies by teaspoonful on prepared sheet.
Bake about 12 minutes- they should be set but not brown. Let cool on sheet for a few minutes before transferring them to a rack.
