Directions:
Preheat the oven to 250°F. Tie the veal neatly with kitchen string. Heat the oil and butter in a flamproof casserole, add the veal and cook, turning frequently, until brown all over. Season with salt and pepper, cover with greased waxed paper, transfer to the oven and roast, turning occasionally for 1 hour. If the meat becomes too dry during cooking, add the warm stock or water. Remove the veal from the casserole, let stand for 10 minutes, then untie and carve into slices. SPoone the cooking juices over a warm serving dish and place the slices of meat in a row on top. Serves 6
