Garden Greek Pasta Salad Recipe

Ingredients:

  • 4 cups cooked radiatore (nugget) pasta
  • 2 c. thinly sliced cucumber
  • 1 c. chopped red bell pepper (1 Med)
  • 1/2 c. red onion, sliced (1/2 small)
  • 1/4 c. Kalamata or Greek olives,
  • pitted and cut in half.
  • 1/4 c. olive oil
  • 1/4 c. lemon juice
  • 2 tsp. salt
  • 1 can (16 oz) kidney beans
  • rinsed & drained
  • 1/2 c. crumbled feta cheese

Directions:
Mix all ingredients except cheese in glass bowl. Cover and refrigerate at least 1 hour to blend flavors. Top with cheese. YUM!
