If using rolled oats try and buy steel cut oats as they contain more of the oat fibre.

Ingredients

  • There are many Bircher musesli recipes, I have two.
  • My recipes have no nutmeg or cinnamon in them but perhaps you could add them to taste, no condensed milk either but you could substitue the cream or yoghurt with that, if no-one else comes up with another recipe!
  • This first one is quite rich and creamy, but very luxurious.
  • Bircher muesli 1:
  • per bowl:
  • In a breakfast bowl/per person:half a banana mashed
  • juice of half a lemon
  • juice of one orange
  • one quarter cup of rolled oats
  • 2 tablespoons of natural yoghurt
  • 1 tablespoon of cream
  • mix together and let stand for a few minutes, for the oats to swell slightly, or make up the previous evening and cover with cling wrap, serve with grated apple or berries in season.
  • Bircher muesli 2 this gluten free!
  • per bowl/ per person:
  • in a breakfast bowl: half a mashed banana
  • juice of half a lemon, juice of one orange
  • In a food processor/coffee or nut grinder place :
  • 2 teaspoons of almonds
  • 2 " sunflower seeds
  • 2 " peptias
  • 2 " sesame seeds
  • 2 " flax seeds
  • Process until fine crumbs
  • Place in bowl.
  • ADD extra two teaspoons of flax seeds
  • 2 tablespoons of natural yoghurt
  • Half an apple grated or berries in season.
  • I also add for health's sake:
  • I tablespoon of flax seed oil
  • 2 teaspoons of lecithin
  • 2 " " psysillium husk
  • Rolled oats could be added to this mixture, but of course it would not be gluten free!

Directions

The Bircher Muesli 2 recipe came from a Swiss friend that was given to her mother's Doctor, she lived to be over 90 years old.
I make the muesli most mornings for my husband who is gluten intolerant. It is importnat that the nuts and seeds are ground just before eating as they lose their potency if stored after grinding.


Bircher Muesli 2 recipe is full of protein with the seeds and nuts.
