This recipe comes from Central Florida, and should be fairly authentic!!!

Ingredients

  • 2 Bunches Collards
  • 1 Ham Steak
  • 2 Tbsp. Bacon Grease
  • Hot Pepper Vinegar

Directions

Wash Greens VERY Well. Tear out heavy stalks and cut into 1/2"" strips across the grain. Combine all ingredients with at least 2 quarts of water and boil in a large pot, for 2 to 3 hours. In advance, combine hot peppers with vinegar and have ready to shake over when served. We keep hot pepper vinegar year-round. The ingredients are very simple, but the result is excellent. You can also add Black-eye peas, mustard greens, turnips, etc.
