SPINACH SALAD WITH SESAME SOY DRESSING Recipe

Ingredients:

  • Dressing: (makes 3/4 cup)
  • 2 tablespoons unseasoned rice vinegar
  • 2 tablespoons soy sauce
  • 1/4 cup sesame oil
  • 1/4 cup canola oil
  • 2 tablespoons honey
  • 1/4 teaspoon Asian chili sauce
  • 1 tablespoon fresh grated ginger root
  • 2 teaspoons sesame seeds
  • Salad:
  • 5 ounces Earthbound Farm Organic Baby Spinach

Directions:
Combine all dressing ingredients in a glass jar and shake vigorously to emulsify.

Place the spinach in a large bowl. Add about 1/4 cup of the dressing and toss to coat. Add more as desired. Extra dressing may be refrigerated up to one month.



This light, flavorful dressing beautifully complements our Earthbound Farm Baby Spinach. Julienned cucumber, toasted sunflower seeds, almonds, or tangerine segments work well as optional garnishes for this salad.
