I make my own topping for this. One diced jalapeno, a couple of roma tomatoes, chopped, a small amount of tomato juice, diced onion and cilantro. Heat in microwave til hot and top on enchiladas.

Ingredients

  • 1 pound cooked chicken breasts. I boil them and I shred mine or you can cube.
  • Flour tortiallas
  • shredded cheddar cheese
  • shredded monterey jack cheese
  • diced onion...I use green...daughter doesn't like white
  • 1 can diced green chilis
  • 1 cup sour cream
  • 1 cup milk
  • 1/3c butter
  • 1/4c flour
  • 1t salt

Directions

place desired amount of chicken, onion and monterey jack cheese in tortilla shell. Roll up and place seem side down in 9x13 dish.

in pan melt butter, stir in flour and salt. Add chicken broth. Mix. Stir in milk and bring to a boil. Stirring constantly. Stir until thick. Reduce heat to low and add sour cream and green chilis. Heat through.

Top with cheddar cheese.

Bake at 350 degrees until cheese is melted and sauce is bubbly. Top with salsa.
