Slices of this take nuking well for later munching. I know you were looking for a casserole but try this you will love it.


  • 2 1/2# Vadalias
  • 1 1/4 Sticks butter
  • 5 egg yolks
  • 8 oz. sour cream
  • Tobasco sauce - lemon pepper - Crazy Salt - minced garlic (all to taste)
  • 2 Frozen Deep Dish Pie Crusts
  • Parmesiano Reggiano shredded
  • Dill weed


Slice the vadalias 1/4". Now saute the slices in the butter. Whisk together the egg yolks and sour cream. Add the seasonings to taste. Mix the onions and the sauce. Ladel the sauce into the two pie crusts and top each with the shredded cheese. Dust liberally with the dill weed. Bake in pre-heated 350 oven for 30 minutes or until top is golden brown.
