can be served with mashed potato, rice, or pasta for dinner, or served on hot toast for brunch.
Ingredients
- 2 tbls butter
- 2 tbls plain flour
- 1 chopped onion
- 1 Red Capsicum
- 2 cups milk
- 1 lge tbls curry powder
- 1 lge tbls mayonnaise
- 1 tbls australian mustard
- 1 tbls sugar
- salt and pepper to taste
- 500 gms scallops.
Directions
melt butter in saucepan,
add onion, red capsicum and saute,
take off heat and mix in curry powder, mayonnaise, mustard, and sugar.
mix in flour and milk.
place back on heat,with scallops included and mix till
mixture becomes thick and creamy, continue stirring for 1 min after boilingon med heat, take off heat, add salt and pepper to taste.
this serves 3 large or four med size serves.
depends on individual preference.
This recipe is my own i made up and use a lot with no complaints.
