Ingredients

  • 1 pound cooked lobster meat(or crab or shrimp)
  • 1 onion, chopped
  • 2 T minced carrot
  • 1 T minced parsley
  • 2 T butter
  • 1 t curry powder, or to taste
  • 2 cucumbers, peeled, coarsely chopped
  • 2 cups botled clam broth
  • 6 cups chilled buttermilk
  • 2 t salt
  • freshly ground pepper
  • lemon juice
  • dairy sour cream and paprika or sieved hard-cooked egg yolk

Directions

Chop seafood coarsely. Cook onion, carrot and parsley in butter until soft. Add curry powder and cucumber; cook a minute or two longer. Whiz in blender with lobster and clam broth until smooth.(Do it in two batches if your blender container is small.) Pour into bowl or storage container and add buttermilk. Season with salt and pepper. Add lemon juice if needed. Chill at least 4 hours. Top each with a blob of sour cream and paprika or sieved hard-cooked egg yolk.


Serves 6-8.
