I would turn oven down to 350 for last hour of cooking.
- 1 box wild rice 6 Cornish hens WINE GLAZE: 1/4 cup red wine; 1/8 tsp pepper; 1/2 tsp sugar; 3/4 tsp salt; 3 Tb melted butter; 1-1/2 tsp lemon juice; optional (place bacon slices on top of hens)
Cook rice according to package directions. Salt and pepper hens. Stuff cavity of hens lightly with rice. Place hens in shallow roasting pan and cover loosely with foil. Roast in hot oven, 400 degrees, for 30 minutes. Uncover; baste with Wine Glaze; bake 1 hour more, basting occasionally with the glaze.
