Less sugar can be used, depending on your taste. This recipe can be altered and you can add more ginger, garlic etc. depending on your taste. I just throw the ingredients together and it always seems to taste great to us. Enjoy!

Ingredients

  • Approx 3lbs chicken cut up into pieces
  • 1/2 cup soy sauce (preferably kikoman)
  • 1/2 cup white sugar
  • 2T Mirin (can be found at asian supermarkets or substitute rice vinegar or white wine)
  • 2 cloves garlic crushed
  • 2 tsp grated ginger

Directions

Pierce the pieces of chicken with a fork in several places. Mix all ingredients (other than chicken) together in a medium sized bowl. Stir until all sugar disolves. Put pierced chicken in marinade and marinate at least 2 hours and as long as overnight. The longer you marinate the stronger the salty taste will be. Make sure to turn the marinating chicken several times. Bake in oven at 350 degrees for 45 min to 1 hour, until all pieces are thoroughly cooked. Turn pieces over after 30 minutes.
