Chocolate & Pistachio Biscotti Recipe

  Italian Cookie

    




Ingredients:
2 eggs
2/3 cup castor suger
1 cup plain flour
1/2 cup self-raising flour
1/2 cup cocoa powder
1/4 cup shelled unsalted pistachios

Directions:
Preheat oven to 180C Line tray with baking paper. place eggs and sugar into large mixing bowl and beat with electric mixers till think, pale and foamy,
Sift flour and cocoa together and add to the egg mixture, add pistachios and mix to a soft dough.
Knead briefly and lightly until smooth. shape into thick log about 25cm long ad place into baking tray. Flatten with your fingers to 2cm thick. Bake for 30 mins. Cool completely.
Prehead oven to 15C. Cut the loaf on a slight diagonal into 1.5cm slices, place on baking trays and bake for 20 mins, turning over half way during cooking, until almost dried out. Cool on wire racks

not too high in fat!
