Enjoy! Watch that you do not overcook the squid, as it will get tough & rubbery.

Ingredients

  • 6 fresh or frozen squid tubes (squid bodies)
  • olive oil
  • 2 fresh chopped tomatoes
  • 4 cloves finely chopped garlic
  • 1 finely chopped red onion
  • fresh chopped basil
  • toasted sesame seeds
  • 1 cup white wine
  • fresh squeezed juice of 2 lemons
  • salt & pepper to season
  • chopped parsley

Directions

slice across squid tubes to form rings. Add a little olive oil to a pan & saute garlic & onion. On a medium heat, add tomatoes & basil & stir to mix ingredients. Add squid rings & stir again. Turn up the heat slightly, & cook until squid starts to brown slightly, stirring constantly. Add 1 cup of white wine - flame this if desired. Season as required. Remove from heat, serve immediately squeezing the lemon juice & adding the parsley & sesame seeds at the very end


Best served on its own, maybe with some crusty, hot bread.
