This is can be made with rice flour instead of any wheat products. Brown rice syrup or apple butter can be substituted for maple syrup, however, more liquid may be necessary.

Ingredients

  • 4 medium apples (mixtures of pippins and gala)sliced
  • 2 t cinnamon
  • 1/4 t nutmeg
  • 1 T lemon juice
  • 1/3 C maple syrup
  • 1/3 C raisins or dried cranberries
  • 1/4 C chopped toasted walnuts (optional)
  • 2 T Whole Wheat Flour
  • 1/4 C apple juice
  • TOPPING
  • 1/2 C Oatmeal
  • 3 T non-GMO, non-transfatty acid margarine
  • 1 t cinnamon
  • 1/4 Wheat germ
  • 1/4 C maple syrup

Directions

Preheat oven to 325 degrees

Lightly grease an 8x8 baking pan

In a medium bowl place apples, cinnamon, nutmeg and lemon juice. Stir until combined. Add maple syrup, raisins, flour and nuts. After mixing, place in baking pan and pour in apple juice.

In separate bowl combine oatmeal, flour, cinnamon, germ and margarine. When well mixed add maple syrup.

With spatula, smooth topping over apple mixture. Try to cover all of the apples. Bake for 20-25 minutes, or until topping is crispy.


Serve with vanilla rice or soy-based ice cream.
