Ingredients

  • Mango Dressing:
  • 2 very ripe mangoes, peeled and diced
  • 1 tablespoon chopped gingerroot
  • 2 cloves garlic, chopped
  • 1/4 cup rice vinegar
  • 1/4 tablespoon vegetable oil
  • 1/4 cup Asian chile sauce
  • Salt and black pepper, to taste
  • Grilled Scallops:
  • 1 1/2 pounds large sea scallops
  • 2 teaspoons vegetable oil
  • Salt and pepper, to taste

Directions

Grilling scallops can be a bit difficult because
they are very moist. Make sure that you use a very
clean and well oiled grill so the scallops don't
stick. As the name suggests, the mango sauce can
also be used as a dressing for salad

For dressing, place mango, gingerroot, garlic, and vinegar in a blender. Puree. Add oil and chile sauce and blend to mix. Season with salt and pepper. Set aside. For the scallops, light coals or start grill. Toss scallops with oil and season with salt and pepper. You may skewer the scallops if you like. Grill scallops 1 or 2 minutes per side, depending on the size. Divide the scallops among 4 plates and serve with mango dressing.
