Ingredients

  • 1 onion, chopped
  • 2 tbl. butter or margarine
  • 1 tbl. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups half-and-half cream
  • 2 cups shredded cheddar cheese (sharp is preferred)
  • 6 potatoes, sliced
  • 1/4 cup bread crumbs

Directions

Preheat oven to 375 degrees. Cook onions in margarine until tender. Add in the flour, salt and pepper. Stir until smooth. Add half-and-half and 1-1/2 cup of the cheese. Heat to a boil. Place potatoes in a 1-1/2 quart baking dish. Pour the cheese sauce over the potatoes. Bake uncovered for about 1-1/2 hours, until top is brown. Mix remaining cheese and the bread crumbs. Place over the the cooked potatoes. Place in the oven and set temp to 550/broil. Broil until crusty and light brown, about 4 minutes.
