Ingredients

  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/3 cup flour
  • 1 1/3 cups milk
  • 3/4 cup water
  • 3 egg yolks, beaten
  • 1 cup thinly sliced bananas
  • Pastry for 1-Crust Pie, Baked
  • Meringue Topping
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Directions

1.Preheat oven to 325 degrees

2. Combine sugar, salt, flour, milk, and water in saucepan; cook over low heat, stirring constantly, until sugar is dissolved.

3. Place egg yolks in bowl. When sugar mixture begins to simmer, add 1 tablespoon of it to egg yolks, mixing well. Pour egg yolks back into saucepan with remaining sugar mixture. Simmer for 3 or 4 minutes, stirring constantly. Stir in bananas.

4. Pour banana mixture into baked pie shell.

5.To make meringue topping, combine egg whites and cream of tartar in bowl; beat with electric mixer until foamy. Gradually beat in sugar 1 tablespoon at a time; beat until stiff and glossy. Stir in vanilla.

6.Heap spoonfuls of meringue on banana cream pie. Spread with back of spoon, lifting spoon to form peaks. Bake until meringue browns.Serves 10
