Coconut Bread Caribbean (Trinidad) Recipe

Ingredients:

3 cups all-purpose flour
1 egg, well-beaten
1 T. baking powder
1 t. vanilla
1 cup evaporated milk
1 t. salt
2 cups finely grated coconut
4 ounces unsalted butter, melted & cooled

Directions:
Sift the flour, baking powder, and salt together. Mix in the sugar and coconut. Add the egg, milk, vanilla, and butter, mixing lightly but thoroughly. Divide the mixture between 2 greased 9-by-5 loaf pans. Fill each about 2/3 full. Sprinkle with sugar and bake in a 350-degree oven for about 55 minutes, or until a cake tester comes out clean. Let loaves cool partially in pans. Then turn out on cake rack. Makes 2 9-inch loaves.
