For variations I sometimes add oysters, crabmeat, shredded carrot etc.

Ingredients

  • 2 medium size desiree (waxy) potatoes peeled and grated medium, 2 eggs, a small onion grated finely, some shredded ham/devon, ketchup, salt and pepper, butter, non stick pan

Directions

beat 2 eggs with a good dollop of ketchup. season with salt and pepper. squeeze out as much moisture of the grated potato as possible. (use hands or put potato in fine cloth and strain). mix the potato, onion and ham into the egg mixture. Mix around so that potatoes etc are well coated in the egg. Turn pan to med-high heat and add butter, til it foams a little (if you are using devon which has a big amount of fat in it already you will not need to use so much butter), and then drop a soupspoonful of mixture into the pan. Press down gently and immediately with a spatula. The cake should be about 1/3 inch thick, and about 3 and 1/2 inches in diameter. The trick is to let the pancake set on one side for about 2 minutes, and then it will be firm enough to flip. Pancakes will take about 5 - 6 minutes to cook.


Makes 5 3.5 inch cakes
