Ingredients

  • 2 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 Tablespoons grated lemon peel, divided
  • 1 tsp vanilla
  • Additional sugar
  • 1 cup powdered sugar
  • 4-5 tsp lemon juice (The poster used about 7)

Directions

1. Preheat oven to 375 F.
2. Combine flour, baking powder, salt in a small bowl; set aside. Beat butter and sugar in a large bowl of electric mixer at medium speed until light and fluffy. Beat in egg, 1 Tablespoon lemon peel and vanilla until well blended. Gradually beat in flour mixture on low speed until blended.
3. Drop dough by tablespoons* onto ungreased cookie sheets, spacing 3" apart. Flatten dough with bottom of glass that has been dipped in additional sugar.
4. Bake 10-12 minutes or until cookies are jsut set and edges are golden brown. cool on cookie sheets 2 minutes, transfer to wire racks. Cool completely.
5. Combine powdered sugar, lemon juice and remaining 1 T. of lemon peel in small bowl; drizzle mixture over cookies. Let stand until icing is set.
*Note from the poster: "The recipe was written to make big cookies using 1/4 cup of dough per cookie and would yield about 12 made this way. I used the tablespoons and made about 2 1/2 dozen, but we lost count as we ate some while baking!)"
