Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cloves or allspice
  • 2 tsp. cinnamon
  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 3 cups grated carrots
  • 1 cup walnuts - chopped
  • 1 cup raisins
  • Frosting:
  • 1 8 oz. cream cheese softened
  • 1/2 cup margarine - softened
  • 1 pkg. 16 oz. powdered sugar
  • 1 tsp. vanilla

Directions

Combine dry ingredients. Stir in eggs, oil and carrots. Boil raisins in water and drain. Mix in walnuts and raisins. Pour into greased and floured 9x13 pan. Bake at 325 for 45-55 min. Cool.

Frosting:
Mix cream cheese, butter and vanilla. Add powdered sugar gradually to desired consistency.
