Ingredients

  • 2 Tbsp. olive oil or vegetable oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup sliced fresh mushrooms
  • 1 8-oz. can tomato sauce
  • 1 4-oz. can tomato paste
  • 2 1/3 cups water
  • 1/2 cup lentils, washed
  • 1 1/2 tsps. crushed basil
  • 1 tsp. dry oregano
  • 1 tsp. granulated sugar
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

In a saucepan, saute onion, garlic and mushrooms in oil until onion is soft. Add Tomato sauce, tomato paste, water, lentils, basil, oregano, sugar, bay leaf, salt and pepper and bring to boil. Reduce heat, cover; simmer on low heat for 30-40 minutes. Serve over pasta.


Makes 6 servings of 1 cup each with 138 calories, 5 g fat and 0 mg cholesterol.
