This may seem to be a strange way to cook the roast but we have never been disappointed. It turns out juicy and tender. It is worth spending the extra money on a good cut of meat. I swear this is just as good if not better than some of the finest prime rib dinners I have had in restaurants.

Ingredients

  • Roasting cut of meat (we like standing rib the best)This recipe is for a 2 to 3 lb. roast
  • your favorite rub or we like to use Clubhouse Brand :la grille smoked hickory pasteor Cattle Boyz BBQ Sauce.(it is a bbq sauce that is spicy and hardly any sugar in the sauce)
  • 1 can consomme
  • black pepper

Directions

heat oven to 500 degrees F.
rub seasonings or paste on roast
place in roasting pan, uncovered and put in oven for 20 minutes at 500. Turn oven down to 200 and leave roast in oven uncovered for 45 minutes to 1 hour. This will usually make a medium rare roast but it would depend on the size you cook. If you like it more done leave it a bit longer. We like ours rare.
Then, when you remove the roast, pour the consomme in the roasting pan and add potato water or just water to your taste....saltiness.. to make a delicious au jous or thicken to make a tasty gravy.
