Ingredients

  • 3/4 cup coarsely grated carrot
  • 1/4 cup thinly sliced green onions
  • 1 large egg, lightly beaten
  • 1/3 cup fine dry bread crumbs
  • Salt and freshly ground black pepper to taste
  • Vegetable oil for deep-frying

Directions

In a bowl combine grated carrot, green onion, egg, bread crumbs and season with salt and pepper; mix well.

In a large skillet heat 1-inch of oil until hot. In batches drop carrot mixture into hot oil by tablespoonful and fry for 1 1/2 to 2 minutes, or until they are golden. Transfer fritters to paper towels to drain. Serve hot.

Makes about 10 fritters.
