Ingredients

  • 2# norweign salmon(skin on)
  • 2tbs salt
  • 2 tbs brown sugar
  • 2 tbs fresh ground pepper
  • 1 tbs corriander
  • 2 tbs tequilla
  • 1 tbs grated lime zest
  • 2 tbs fresh chopped chives

Directions

start salmon skin side down, and repeat on other side. rub with salt, sugar, pepper, corriander. sprinkle with tequilla, chives, and zest. wrap tightly(not too tight)and put in pie pan. place another smaller pie pan on top of it, and a 1# weight( dried beans, split peas etc). refridgerate for 48 hours. after the first 24 hours drain the pan and turn the salmon on the other side for the next 24 hours. when ready, slice paper thin on a 45 angle. enjoy with lavosh or crackers or by itself
