Ingredients:

2 1/4 c. yellow cornmeal
1 tsp. salt
2 Tbsp. finely chopped onion
3/4 tsp. baking soda
1 1/2 c. buttermilk

Directions:

Heat 1-inch of oil to 375 degrees. Mix cornmeal, salt, onion
and baking soda. Stir in buttermilk. Drop by spoonfuls into
hot oil. Fry until browned, about 2 minutes. Makes 2 dozen
hush puppies.
