Ingredients

  • 1/2 C sugar (can use sugar substitute-sugar twin)
  • 1/2 C Vinegar (any kind)
  • 1/2 teaspoon dry mustard
  • 1/2 C oil (I use olive oil)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon paprika
  • 1 large clove garlic, crushed
  • 8 cups torn lettuce ( about 1 lb. I used the mesclun mix
  • 1 pint strawberries cut up
  • 4-8 oz. crumbled feta or blue cheese
  • toasted pine nuts or sunflower seeds or toasted sesame seeds or any kind of nut (to taste)

Directions

mix all dressing ingredients in a jar and shake, giving enough time for the sugar to dissolve. You don't need to wait if you use sugar substitute. Put greens in a bowl add dressing and toss. Cover with strawberries, feta and pine nuts. Makes 4-6 servings
