• 1/4 pound (115g) butter
  • 2 hard-cooked egg yolks
  • 1/4 cup(50g) sugar
  • 1 cup(140g) flour
  • 1/2 teaspoon lemon or vanilla extract


Preheat the oven to 375 degrees(190C). Cream the butter, then add the egg yolks, and beat well. Beat in the sugar. Add the flour and the lemon or vanilla extract and combine thoroughly. Put through a cookie press or arrange by teaspoonfuls on ungreased cookie sheets. Bake for 10-12 minutes or until lightly browned. About 30 cookies.
