Ingredients:

  • 2 large onions, chopped (2 cups)
  • 2 cloves garlic, minced
  • 1/3 cup olive oil or vegetable oil
  • 1 can (2 lbs.,3 oz.) Italian tomatoes
  • 2 tsp. salt
  • 1/2 tsp. seasoned pepper
  • 3 lbs. boneless chuck
  • unseasoned instant meat tenderizer

Directions:
1. Saute onion and garlic in oil until soft in large saucepan. Stir in tomatoes, salt and pepper. simmer sauce, uncovered, 10 minutes; reserve.

2. While sauce simmers, trim any excess fat from steak and score remaining fat edge every inch. Sprinkle meat with tenderizer, following label directions.

3. Heat a large skillet. pan-broil steak in skillet, turning once, 5 minutes on each side, or until steak is done as you like it.

4. Place steak on cutting board; carve into thin slices. Return to skillet. Stir in tomato sauce; simmer 3 minutes to blend flavors.(This makes enough for 12 individual casseroles for freezing)

To Freeze: Divide mixture among 12 freezing-cooking bags(10x8-inches). Close and label bags and freeze, following manufacturer's directions.To Serve: Place frozen bag in a large saucepan of boiling water. Allow water to return to boil, then boil 20 minutes. Open bag and spoon over cooked thin spaghetti in individual casseroles. Serve with hot garlic bread and tossed salad, if you wish
