Leek and Potato Soup Recipe

Ingredients:

  • 6c chicken broth, 6 leeks-chopped(white part only), 1/2c chopped onion, 4 medium potatoes-peeled and diced, 1t salt, 1/4t pepper(white is best), 1c light cream, chives or parsley for garnish

Directions:
Combine first 6 ingredients in large saucepan. Bring to a boil. Cover and simmer for 30 minutes. Run through blender or food processor. Return to saucepan.

Stir in cream. Heat through. Garnish with chives or parsley. Makes about 8 cups.



Smooth and creamy.
