Try some of the first batch, you may want to add more salt. Try the tentacles prepared the same way.

Ingredients

  • 1/2 lb squid, body only, or with tenacles
  • 1 C pancake batter mix
  • cold water
  • 1/2 tsp salt
  • cooking oil

Directions

Cut calamari bodies with sharp knife into 1/2 inch rings, make an ice bath and add calamari. Prepare 1/2 C. batter by adding water a little at a time to a medium consistency, a little thicker than for pancakes. add salt to batter. Put the remaing dry mix in a seperate small bowl. Heat oil in a small skillet (about 1/2 inch of oil) dip the squid rings into the liquid batter, then into the dry mix and carefully drop into oil till very lightly browned, this takes only several minutes. do not overcook! drain on papertowels and serve with lemons and a good spicy cocktail sauce.


this should serve as an appetizer for 2 to 4. These should be eaten while hot.
