Cruise Inn Crab Cakes Recipe

Ingredients:

  • 2 lbs. blue crab ( 1 lb. special, 1 lb. claw)
  • 2 eggs, well-beaten
  • 3/4 tsp. salt
  • 1/4 tsp. ground red pepper
  • 1 cup mayonaise
  • 1/2 cup grated and drained onion
  • 4 oz. crushed saltines

Directions:
Beat eggs well; add salt and pepper. Beat til pepper dissolves. Add mayonaise and drained onion to eggs and mix well. Pour over crab. Add 1/2 cracker crumbs and stir gently to blend, leaving the crab as whole as possible. The mixture will be rather wet and loose, but is manageable when cakes are coated with crackers. Shape into patties and dredge in remaining crumbs. Make crumbs adhere by pressing. Heat oil to 325 degrees. Deep fry until golden brown.

I use lump crab meat. These are delicious since they're almost all crab with very little filler.
