Ingredients:

4 to 6 boneless chicken breasts, skinned
1/3 c. olive oil
Juice of 3 limes
4 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. fresh cilantro, chopped, (optional)
Red and yellow peppers, roasted, (optional)

Directions:

Combine olive oil, lime juice, garlic, etc. in a bowl. Place chicken in marinating dish and pour mixture over chicken. Marinate for at least 1 hour. Cook on grill, until done.
